When a recipe calls for sliced or diced bacon, freeze the strips for easier cutting: This way, they won't slide under the knife.

I have done this for a very long time now. It is sooo much easier to make it ahead like this. You will find yourself using more and more bacon to since it will be so handy so be careful if you are watching your weight.
