Freezing Citrus Peels

When recipes call for fresh citrus juice, don't toss out the fruit after squeezing it. Instead, freeze the peels for later when you need a bit of grated zest.

Freeze, then Grate
Freeze the peels in resealable bags for up to three months. There's no need to thaw before using; simply shave peels with a citrus zester or fine grater.
