Tips for Making Ricotta Cake

1. Remove any excess liquid by wrapping the ricotta in cheesecloth and leaving it overnight in a colander set over a bowl.

2. When combining rice with ingredients such as ricotta, fold with a rubber spatula so that fewer grains are broken.

3. For a clean edge, replace springform-pan ring before dusting with confectioners' sugar. A fine sieve is ideal for sprinkling sugar.
