Kitchen Shears

Everyday Food, Volume 12 May 2004

These special scissors can handle a lot more than opening packages and cutting paper.

Why They're So Great
Unlike regular scissors, these shears are specifically designed for kitchen tasks and can often be used instead of a knife. You can use them to snip herbs, trim green beans and other vegetables, even slice a pizza. They are particularly good for cutting up a whole chicken. Some (like the pair shown here) have a notched bottle opener inside the handle.

What to Look For
The blades, whether serrated or straight-edge, should be made of rustproof stainless steel. Rubber grips are more comfortable and less likely to slip than metal.

How to Maintain
Always wash kitchen shears by hand instead of in the dishwasher, and be sure to dry them thoroughly before storing.
