Whether presented as a side dish or an entree, a delicious salad is the result of many factors, from the variety and quality of the ingredients to the dressing with which it's served.

Chef Alice Waters, owner of the Berkeley, California, restaurant Chez Panisse, creates some of the country's most innovative salads, each characterized by an unusual combination of flavors and colors. Here are two of her signature recipes.
