Cooking Tips from Chef Thomas Keller

The Martha Stewart Show, November 2009

Chef Thomas Keller has picked up many helpful kitchen tricks during the course of his impressive career.

Here are just a few -- all done using a rolling pin -- that may come in handy in your home:

1. To separate garlic cloves, lightly hit a head of garlic with a rolling pin.

2. To remove skin from garlic cloves, lightly crush individual cloves of garlic with a rolling pin.

3. To remove seeds from a pomegranate, cut the fruit in half along the equator. Holding over a bowl, lightly hit the pomegranate half with a rolling pin to release seeds. Add cold water to separate the seeds from their membrane. Remove membranes and drain seeds.

4. To extract more meat from lobster legs, pull off legs of cooked lobster, then cut off wider end of each leg. Using a rolling pin, roll from pincers toward cut ends. Strands of lobster meat will emerge from each leg.
