Must-Have Kitchen Knives

Everyday Food, May/June 2003

The right set of knives can make chopping, slicing, dicing, and carving seem less like chores and more like fun.

Chef's Knife
This multipurpose knife is ideal for mincing, chopping, and slicing. The flat side can be used for smashing garlic.

Paring Knife
Shorter and lighter than a chef's knife, this knife is ideal for more delicate work, such as peeling fruits and vegetables.

Bread Knife
The serrated edge gently and neatly slices breads and cakes as well as soft, juicy produce, such as peaches and tomatoes.

Similar to the chef's knife but with a straighter edge, this Japanese-style cleaver is designed for mincing and chopping. The knife is available with a smooth or hollow-ground edge.

Carving Knife
The long, slender blade is perfect for slicing roasts and carving turkey. An 8-inch-long blade is the most versatile.
