Why They Are So Great
Besides rubber, flexible spatulas are now available in heat-resistant silicone; you can use them just like you would metal or wooden spatulas. Because they won't scratch nonstick surfaces, these spatulas are ideal for scrambling eggs and cooking omelets. Their flexible head allows you to easily scrape the inside of containers clean.

How to Use
For the best all-purpose tool, choose a spatula with a dark-colored head, which won't easily be stained by such food as berries or tomato sauce. Larger heads are good for folding egg whites into batters; smaller ones for cleaning out jars. Some spatulas have a removable head that can be placed right in the dishwasher, but washing by hand is recommended.
