I tried this recipe for my family and it was a hit. My kids don't really like eggplant, but with it breaded and topped with mozzarella, they lovedit! The recipe gives it a "meatier" taste, you forget it's eggplant!

I don't even like eggplant, but I love this recipe. It was a big hit! Also, I froze the leftovers because I was going out of town and it was just as good reheated.
