This fizzy, four-ingredient pitcher drink is based on the famed Italian aperitif but calls for prosecco instead of gin; so while it still whets the appetite, it won't go right to your head. It's the perfect lighter beverage to have with appetizers and before a big feast.

Ingredients

  • ¾ cup red aperitivo, such as Campari or Aperol

  • ½ cup sweet vermouth, such as Carpano Antica

  • ¼ cup fresh lemon juice

  • Ice, for serving

  • 1 bottle (750 milliliters) prosecco brut or other dry sparkling white wine, chilled

  • Chilled club soda, orange slices, and rosemary sprigs, for serving (optional)

Directions

  1. In a pitcher or punch bowl, combine Campari, vermouth, and lemon juice; refrigerate until ready to serve (or combine in an airtight container and refrigerate up to 3 days).

  2. Just before serving, add ice to pitcher, top with prosecco, and stir once. Pour into ice-filled glasses, top each with a splash of soda, and garnish each with a citrus slice and rosemary sprig; serve immediately.
