October is the time for summoning spirits, including the boo-zy kind. Amaro, an herbal Italian liqueur, gives the classic martini a fall twist. Make it a double, for all your toil and trouble.


  • Large cocktail onion

  • Pimiento-stuffed olive

  • 2 ounces gin

  • ¾ ounce amaro, such as Amaro Nepèta


  1. To make "eyeball" garnish, use the tip of a paring knife or a small melon baller to carve a 1/2-inch well into one side of a large cocktail onion. Slice pimento in half crosswise and insert a half into well of onion; skewer and set aside.

  2. Pour gin and amaro into a cocktail shaker filled with ice; shake 10 seconds. Strain into a chilled martini glass and serve with garnish.
