Amaro, an herbal Italian liqueur, gives the classic martini a fall twist. Make it a double, for all your toil and trouble. Ingredients Large cocktail onion Pimiento-stuffed olive 2 ounces gin ¾ ounce amaro, such as Amaro Nepèta Directions To make "eyeball" garnish, use the tip of a paring knife or a small melon baller to carve a 1/2-inch well into one side of a large cocktail onion. Slice pimento in half crosswise and insert a half into well of onion; skewer and set aside. Pour gin and amaro into a cocktail shaker filled with ice; shake 10 seconds.
