Ingredients 2 tablespoons vegetable oil 1 tablespoon minced garlic (from 3 cloves) 1 tablespoon minced fresh ginger (from a one-inch piece) 3 scallions, white and light green parts thinly sliced (¼ cup) and dark greens thinly sliced for serving 1 cup chopped ham 1 cup trimmed and halved snow peas 3 cups cooked and cooled jasmine rice 2 large eggs, beaten 2 tablespoons reduced-sodium soy sauce Directions Heat a large cast-iron skillet over high 3 minutes; add oil. Add garlic, ginger, and scallions. Cook, stirring, 30 seconds. Stir in ham and snow peas; cook 1 minute. Add jasmine rice; stir to combine, then push rice to side of skillet.
