Twice-Baked Potato-and-Raclette Casserole

Mashed potatoes are enriched with butter, sour cream, cream cheese, and raclette for this decadent fondue-inspired casserole. Crispy potato skins roasted with garlic and sage make an ingenious garnish.

Cook's Notes

The potatoes can be made through step 1, covered, and refrigerated for up to three days; store the skins and flesh separately. Bring to room temperature an hour before baking, and increase the time by 10 minutes.
