Creamy Lemon Chicken with Spinach and Artichokes

Like your favorite dip reinvented as a meal, and made healthier to boot! Sauteed chicken cutlets cook fast, and cream cheese provides a little richness with less fat than heavy cream.

    This was delicious! I used some Kale and Spinach, had to use canned artichokes as I couldn't find frozen. Would definitely make again, one pan meal with lots of flavor!

    Our family loved this dish. It was delicious & pretty easy to put together. We liked thighs with ours & marinated artichoke hearts from a jar. We may add red pepper flakes next time, something to give it some spice. I think the chicken would be really tasty if I marinated it first. Our side dish was a corkscrew pasta salad with kalamata olives & mild green olives. Thank you for this tasty recipe.

    I was excited to try this recipe as my husband is on a low carb diet. Even though I used a jar of drained marinated artichoke hearts for extra flavor and threw a handful of halved cherry tomatoes in at the very end for color, we both found this recipe pretty bland and the sauce didn’t set up the way I was expecting. Maybe it would be better with boursin or some other herbed soft cheese?

    Really, really good! Served without rice but no other adjustments. Definitely make again!

    It was so delicious. I used fresh tarragon as I didn’t have any fresh thyme. Also served it with mashed potatoes instead of rice. Really simple and quick to make yet so tasty. Loved it.

    Total hit at a dinner party. Bright flavours, creamy but not heavy. I had some soft goat cheese so I added it along with the cream cheese and it added to the lemon juice's tang. Also substituted tarragon for thyme (due to some guests' strong dislike of thyme) using dried tarragon and a bit less. Definitely adding this to the rotation.
