Dinner Made Easy Is What You Need This Week
Because it's hard getting back into routine.
MONDAY: EGGPLANT AND ROASTED-PEPPER PASTA
A fresh-tasting pasta that you can make ahead and serve at room temp if that fits into your schedule. It's just as delicious made and served straight away, but that flexibility is handy on this last day before routine starts again.
TUESDAY: CHICKEN CUTLETS WITH SUMMER SQUASH AND FETA
Fast and easy, this entree takes chicken piccata to the next level by adding tender summer squash, fresh spinach, and salty feta to the mix. Serve with plenty of crusty bread and butter.
WEDNESDAY: SAUSAGE-AND-PEPPER RAGU OVER POLENTA
Another night, another 20-minute dinner recipe. This hearty main uses quick-cook polenta and Italian sausage, along with a colorful mix of bell peppers (and a touch of tomato paste and chicken broth), for a rapid and tasty take on a favorite Italian-American dish.
THURSDAY: BLISTERED GREEN-BEAN AND CORN FRITTATA
It's not all fall forward around here; we're still on an eat-as-many-local-tomatoes, get-as-much-corn-as-you-can-while-it's-in-season kick as this vegetarian dinner proves. Sauteed green beans and corn take the frittata, one of our go-to weeknight dinners, into summery territory. Juicy cherry tomatoes dressed in olive oil, red-wine vinegar, and chopped parsley amp up the seasonality and make the perfect side.
FRIDAY: STEAKHOUSE WEDGE WITH WARM TOMATO VINAIGRETTE
For a fabulous way to start the weekend, try this totally delicious riff on steak with an iceberg salad. Hangar steak is cooked on the stovetop, topped with cheese, and served with tomatoes, sweet onions, and that wedge of iceberg. A warm tomato vinaigrette brings it all together.
SATURDAY: SMOKY CLAMS AND FREGOLA
This one-pot meal feeds a crowd and is fancy enough for company. Go ahead and invite friends or neighbors over to share the divine combination of the tiny pasta known as fregola with fresh clams, spicy andouille sausage, and plenty of corn on the cob.
SUNDAY: YOGURT-MARINATED LAMB AND CHICKEN SKEWERS
We're not over skewers yet, and we're certainly not over grilling. Even the lemons and pitas hit the grill to get a little char, along with marinated lamb and chicken, cocktail tomatoes, and onion wedges in this entree. Don't forget the feta-and-yogurt sauce-it's more complex than the usual tzatziki and absolutely irresistible.
