    This recipe contains numerous errors and has flavor problems as well. First of all, as in the video, the crust added to each ring mold is 1/3 cup. The mousse is flavorless and needs both sugar and vanilla. I added a total of 3 T sugar, 1 T to the whipped egg whites for stability and 2 T to the beaten eggs before adding to the chocolate mixture. I also added 1/2 tsp best quality vanilla. Finally, also as in the video, add 1/2 cup of mousse to each ring mold. I will return and report on when (and if) this time consuming, labor intensive recipe actually comes out of the ring mold.

      The meringue topping needs more instruction as to how long it should be cooked. I cooked my meringue to 160 degrees to be sure the eggs are safe for kids and pregnant women. This meant that the meringue volume was not quite enough and the meringue was a bit too thick. In order to remove the dessert from the molds, use your hands to warm them for about 10 seconds each. Just wrap both hands around each mold. The metal heats up quickly. Then using the 12 oz jelly glass as in the video, push the dessert up. You will need to use your finger tips to hold the dessert from the bottom gently and transfer each to its own individual dish. Then use the torch to brown the meringue to get that toasted marshmallow flavor. It was a big hit. With the changes, it was really good. More information on how to heat the meringue would have been helpful. It is a lot of work and would have to be a labor of love. I hope to find other uses for the ring molds. I may try this one more time for another special occasion to see if I can have better success with the meringue.
