It's that time again; you're thinking about dinner and what to cook. So here's our weekly list of suggestions: dinner recipes that take less than an hour of mostly hands-off time. Some recipes will be much faster than that. We'll suggest what you can do to prep ahead and cut down on weeknight work. On the weekends we switch things up with cooking projects, long, slow cooking meals, and recipes for entertaining. So visit us every week for dinnertime inspiration.
MONDAY: SAFFRON CHICKPEAS AND GREENS WITH QUINOA
Here's healthy, filling meal to start the week. It uses cooked quinoa and comes together in 25 minutes. If you cook quinoa for this dinner, add another 25 minutes of mostly hands-off time to making this dish.
TUESDAY: GRILLED CHICKEN WITH MINT AND RADISH SALAD
Light, fresh, and fast, this is a perfect midweek, almost-summer meal. No pots or pans at all, though you will need two bowls: one for the chicken and one for the salad.
WEDNESDAY: ASIAN PORK BUNS WITH BOK-CHOY SLAW
A 30-minute dinner that's a great new way to use ground pork, that's this fast, flavorful recipe. The meat is stir-fried with the tasty trio of sambal oelek, hoisin sauce, and vinegar, then served in hot-dog buns.
THURSDAY: PENNE WITH SHRIMP, FETA, AND SPRING VEGETABLES
Quick, full of fresh spring flavors, and all made in one pot-what more could you want of a Thursday dinner in June?
FRIDAY: CRISPED BROWN RICE WITH BEEF, VEGETABLES, AND EGGS
Whether its called a crisper crash or a pantry raid, we love a meal that pulls together whatever the fridge offers up. Here, leftover rice stars with a small piece of steak, some scallions, Napa cabbage, and carrots-but when you make this, use the vegetables and meat you find in your refrigerator.
SATURDAY: CLASSIC MARGHERITA PIZZA
Perhaps double (or triple?!) this recipe because everyone loves pizza and this truly is a classic. Oh, and make the dough ahead.
SUNDAY: GRILLED HALIBUT STEAKS WITH POTATOES, OLIVES, AND ONIONS
Halibut steaks or fillets work in this grilled dinner. The fish and vegetables are tossed with an herb vinaigrette after cooking for lots of zesty flavor. Peppery arugula and charred bread are the perfect accompaniments.
