Ingredients 2 tablespoons safflower oil or ghee 1 pound peeled and deveined large shrimp Kosher salt and freshly ground pepper 2 teaspoons garam masala 1 cup diced onion 1 tablespoon minced fresh ginger 1 ½ cups Marinara or store-bought marinara 2 tablespoons heavy cream Steamed couscous or long-grain rice, for serving Thinly sliced scallions, for serving Directions In a large skillet, heat 1 tablespoon oil over medium-high. Season shrimp with salt and pepper; sprinkle with garam masala. Add to skillet in a single layer and cook, flipping once, until opaque, about 3 minutes; transfer to a plate. Reduce heat to medium; add remaining 1 tablespoon oil and swirl to coat. Add onion and ginger; cook, stirring, until onion is tender, about 8 minutes. Season with salt and pepper. Add marinara; simmer until slightly thickened, about 5 minutes. Remove from heat; stir in cream and shrimp with any accumulated juices. Season with salt and pepper.
