Meyer-Lemon and Coconut Layer Cake

A truly memorable way to feed a crowd, this dessert alternates between moist coconut cake and rich coconut-lemon curd on the inside and is covered with coconut buttercream frosting and shredded coconut on the outside. Homemade candied lemon slices and fresh mint decorate the top.

    Made for Easter dinner celebration that was also a birthday. The lemon buttercream and lemon-coconut filling were fabulous. The cake was OK; it seemed dense and for the same texture, I would have preferred to make a straight up coconut cake (Barefoot Contessa is a good one!). So, overall - OK.

    This came out perfect for me. Moist and everyone loved it. I did not add any of the shredded coconut as most of my family likes coconut flavor without the chewiness of the coconut.

    Followed the directions carefully however the cake was dry; rose up too high in the middle so I sliced the top off; not enough lemon curd to moisten between the layers of this dry cake; Buttercream frosting didn't want to stay on the cake and actually slipped off the side - fortunately after the guests were served. It just wasn't a very good cake and a full quarter of it ended up in the trash (after sending guests home with a quarter each)...have no idea what they did with it. Too bad as I worked for days on getting this cake made (making lemon curd well in advance so it would be cold, toasting coconut in advance as well). I've had much better results with a coconut zucchini-blueberry lemon curd cake - it was simply marvelous and moist. I would not bake this cake again.

    I get the Martha Stewart Living magazine and found this recipe there my mother and I had a brunch date so I decided to make this cake for us and I had to say I made it to the recipe and it was the most delicious coconut lemon cake we ever had thank you Martha you're the best

    Made this for Sunday family dinner celebrating Mother s birthday! Wanted something special and it was! Wish I had leftovers! Will make again. Followed recipe exactly except I decorated with fresh lemon and mint and skipped th candied lemon. Mither' S
