Neapolitan Ice Cream Cake

Three flavors of ice cream -- pistachio, vanilla, and strawberry -- are layered with chewy cornbread cake and frosted with whipped cream in this showstopping make-ahead dessert. In a nod to the filling, the top is garnished with sliced strawberries and chopped pistachios.

To make ice cream spreadable, beat each quart in a stand mixer fitted with the paddle attachment on medium speed until just pliable.

    This is a lovely cake with an unusual but delicious cake layer. However, this is not "Neapolitan" style. Neapolitan is chocolate, vanilla and strawberry. What you have here is a "spumoni" cake: vanilla, pistachio and red fruit. In Italy, the red fruit would be cherry, with chopped pieces of cherry mixed into the ice cream.
