Irish Soda Scones

These scones pack the hallmarks of our favorite St. Patrick's Day bread -- loads of currants and caraway seeds -- into a single serving with a light, fluffy texture. Just mix, scoop, bake, and enjoy with a spot of tea.

    I've made these numerous times with adaptations to fruit and glaze. These are tasty with a substitution of chopped dried cranberries for the raisins. With the orange glaze, the cranberries are a wonderful addition. Have also made with dried blueberries. These are a quick and fail-safe scone recipe for plain scones without the glaze or fruit - just cut down on the sugar in the mix - recipe as is would be too sweet for addition of jams or preserves. Finally - never added the caraway seeds as would not be appropriate for cranberry/blueberry orange or for plain scones.

    Made these for a St. Patrick's week breakfast and they were amazing. I agree they are great without the glaze, but also good with if you like sweeter things. I will definitely be using this recipe as a base for other flavored scones as they were so fluffy, moist and delicious and I was never even a scone fan before!

    Delicious and apparently foolproof. I just made these scones and they are superb. I was watching the news and added the buttermilk before cutting in the butter. Tried to mis it in by hand with my pastry blender but it was a mess. Got out my hand mixer and blended it together trying to be careful not to over mix. They turned out perfect. The only other things I did is reduce the caraway to one teaspoon and I used half whole wheat flour, as I usually do whenever I can. I will definitely save this recipe and make it often, not just on March 17☘️🍀.

    The only thing I changed was to leave out the glaze. These sconces stand alone without the glaze. My Irish husband is a believer!! He is also not a caraway seed fan. So I made half and half. This recipe is simple and EXCELLENT.
