BRAISE THE MEAT
Follow brisket recipe through step 2. Let cool to room temperature, then refrigerate, covered, up to 3 days. On the day of, remove solidified fat from surface and warm in a 275-degree oven for about 30 minutes.
ROAST THE VEGETABLES
The tomatoes and mushrooms can be made 1 day ahead. Reheat in a 275-degree oven for about 15 minutes.
PREP THE GRITS
Soak them in water overnight at room temperature, and drain before cooking. They'll cook in about half the time.
