Lemon-Ginger Soda

A touch of honey mellows the fresh ginger and lemon in this refreshing fizzy drink. If you make the base in advance, the soda comes together in mere seconds.

    This is soooo refreshing! I skip the honey. It's so easy to fix...just peel the ginger, chop it up into chunks and add to my mini food processor. I then add the water once it has thinned. I put the ginger through a mini strainer, and then squeeze out all the juice through the strainer. Whatever the amount of juice, I do equal parts of lemon juice. I buy a bottle in the organic section, so it saves me from squeezing lemons. I put it in a small jar, and use 1/8 cup (2 Tbsp) with 12 oz seltzer water. My summertime refreshment, for sure!

    I made this according to directions and it is really good. However, I have been making a 'simple ginger' to add drinks for a long time. I use ginger--5-5 inches or the equivalent--slice in circles--add these to boiling water (8 cups )--set aside and let steep 30-=45 minutes. Strain to remove all ginger pieces. Sweeten with honey to taste. Add this to plain seltzer, plain water ( that you will use over ice ),or any hot teas--teaspoon by teaspoon until it is just to your liking ! I also slice a circle of fresh ginger--put in an old-fashion ice cube tray--add distilled water or whatever water you usually drink--freeze and use these for the cubes....This is so refreshing-hot or cold. Especially good if you are feeling 'poorly' or just need a pick-me-up plus it id good for you--well, it was for folks way way back--like to the Chinese Dynasty ! Try it--you will make it over and over and over again.
