Cook's Notes

To get ahead, make the pastry shell up to a day in advance. After baking, let cool completely, gently wrap in parchment-lined foil, and store at room temperature.

    Puff pastry version delicious . I applied the same bake ahead technique using gluten free pie crust and results were good with both quich and custard type fillings. No more soggy crusts! Thanks for the idea.
