It's holiday season; there's so much to do, so much to cook, so much to eat. These easy dinner recipes are just what you need to keep you and your family on track. Most take less than an hour of mostly hands-off time, many cook much quicker than that but may require constant stirring. These are delicious meals the whole family can enjoy. Yes, there will be pasta. On the weekends we like to try something different; recipes that cook long and slow, projects that get us using new ingredients and techniques, and menus to make entertaining a cinch. MONDAY: BLACK RICE AND BROCCOLI WITH ALMONDS

TUESDAY: SALMON NOODLE CASSEROLE

WEDNESDAY: MEATBALLS WITH GARLIC BREAD

FRIDAY: FARRO AND PORCINI RISOTTO
Because we love risotto! Oh, yes, porcini too! If you haven't tried making risotto with farro or barley, please do. We're sure you'll love the results. This recipe takes only 35 minutes to the table and includes making a basil-parsley-walnut pesto that is stirred into the risotto.
SATURDAY: SWISS CHARD PIE
Sorta kinda keeping with an Italian theme (risotto last night!), our vegetarian pie is inspired by the glorious Italian vegetable tortas popular in Liguria. It has an olive-oil crust and is an easygoing recipe; make it whenever you have time and freeze, then bake it straight from frozen.
SUNDAY: RIB EYE WITH HORSERADISH BUTTER AND ROOT VEGETABLES
Just because it's the weekend doesn't mean you always want to spend all afternoon in the kitchen; sometimes a fast weekend dinner is welcome. (Especially if you've been working on your Christmas cake or started holiday cookie production.) And sometimes you just plain want a steak. This restaurant-worthy dinner takes only 30 minutes and pairs the rib eye with roasted celery root and carrot -- all cooked on one sheet pan.
