Pear and Sour-Cherry Pie

Since fresh sour cherries are ephemeral summer finds, this recipe uses frozen ones. They're combined with fresh pears and warm spices like cinnamon and ginger for the filling.

Frozen sour cherries are available online at stores such as Friske's Farm Market (friske.com) and Northwest Wild Foods (nwwildfoods.com). You can also substitute Wyman's Fresh Frozen Dark Sweet with Red Tart Cherries, or frozen sweet cherries; just add three tablespoons of lemon juice to the filling.

    Delicious but I would leave out the cinnamon. Cinnamon is more of an apple pie spice and it would be better to leave it out here. Otherwise, it was a big hit.
