Cool Down This Summer with These Chilled Soup Recipes

What's the best way to cool down this summer? A bowl of chilled soup. Not only are cold soups wonderfully refreshing and delicious, they're also perfect for using up leftover seasonal produce.  Many cold soup recipes call for little to no cooking. And, as they need time to chill, they're all make-ahead. Another plus? Chilled soups can be made in big batches and frozen for later, just like their hot counterparts. Simply divide the soup into freezer-safe containers, then pop them in the freezzer for meals at a later date. When you know you'd like to enjoy them within the next day or two, transfer the frozen soup in the refrigerator until thawed.  Add a chilled soup recipe (or three) to your repertoire and make these fresh, flavorful dishes that taste like summer.

Basic Chicken Soup

Rating: 3.5 stars 377
Chicken soup is the ultimate comfort food. It warms and satisfies, which is why you make it when you're feeling under the weather or chilled to the bone in winter. Our simple recipe has classic flavors and a short ingredient list—and it comes together faster than most versions (you'll have your spoon in a piping hot bowl in just over an hour). It's low-effort, too: All you have to do as the flavors meld together on the stovetop is give your soup the occasional stir.

Roasted Pumpkin Soup

Instead of sugar pumpkins, you can use other winter squash in our Roasted Pumpkin Soup recipe. Kabocha, calabaza, and Hubbard are the best alternatives. Choose a squash that feels heavy for its size and is free of soft spots. The soup can be garnished with toasted pepitas or a dollop of sour cream—or both.

Butternut Squash Soup with Coconut Milk and Ginger

Sweet roasted butternut squash tempers the heat of fresh ginger in this vegan soup. Coconut milk is swirled in for creaminess, while toasted squash seeds add a pleasing crunch.
