It's still high summer in the kitchen, so here's our super-seasonal weekly list of dinner recipes and ideas. The recipes take less than an hour of mostly hands-off time, many cook much quicker than that but may require constant stirring or tending on the grill. Of course, there will be pasta, and, yes, it will be delicious. Visit us every week for dinnertime inspiration.
Monday: Beet, Plum, and Ricotta Salad
Who said you can’t put fruit in a dinner salad? Obviously, no one who has had this seductive and delicious mix of colors, textures, and tastes.
TUESDAY: Poached Salmon with Watercress and Peaches
Oh my, we’re on the stone-fruit-for-dinner thing again. And why not? Peaches, plums, apricots, and their kin are at their peak now and soon to be gone from farmers’ markets. Enjoy them while you can in dishes sweet (obvious) and savory like this light but substantial dinner.
WEDNESDAY: Grilled Pork Cutlets with Watermelon-Cucumber Salad
Fresh, quick, and streamlined for the cook: no pots needed, just the grill and a cutting board, then a platter to serve. For the eaters, cast aside thoughts of watermelon as the stuff of fruit salads -- it's also great in savory ones. In this Vietnamese- and Thai-inspired recipe, melon and cucumber are the cool contrast to sliced chile and grilled pork.
THURSDAY: Spaghetti with Cherry Tomatoes, Habanero Chile, and Mint
Double this fast-to-make (we’re talking 15 minutes till dinner) and fabulous-to-eat recipe to make hefty portions of lively, flavorful pasta. (The recipe was written for lunch servings, and we know you’ll want to eat more.)
FRIDAY: Chimichurri Burger
Because what befits a summer Friday more than a grilled burger? Beef goes so well with the herby, garlicky national sauce of Argentina.
SATURDAY: Grilled Pizzas with Tomatoes and Avocado
Ah, yes, grilled pizza is a wonder. This quick-to-make and delicious-to-devour version uses store-bought dough, but if you have time, make your own. And if you haven’t had avocado atop a pizza before, we think you’ll like it -- especially in combination with tomatoes, basil, and goat cheese.
SUNDAY: Sea Ranch Lobster
You don’t have to be on the Maine coast or in Montauk, New York, to enjoy grilled lobster. Serve with this stellar parsley-mint-cilantro-anchovy-and-chile sauce.
