Caramelized Onions with Ginger

Fresh ginger adds intrigue to these sweet-and-savory caramelized onions. They're the ideal garnish for Martha's Beef Biryani.


  • ¼ cup vegetable oil, such as safflower

  • 3 large onions, sliced ¼ inch thick (about 4 cups)

  • 1 tablespoon peeled and chopped fresh ginger

  • Kosher salt


  1. Heat oil in a medium skillet over medium-high. Add onions and cook, stirring occasionally, until onions begin to brown on the edges and soften, about 5 minutes.

  2. Reduce heat to low and add ginger to skillet. Continue cooking until onions are very soft and caramelized, 5 to 6 minutes more.

  3. Remove from heat and season with salt.
