Pistachio Cannoli Cake

    I cannot get enough of this cake. I did use less cream in the ricotta filling, I added additional ground pistachios everywhere, and I alternated a thin layer of pistachio paste and chocolate hazelnut spread at each layer below the ricotta filling. This cake stays moist for days, gone before a week!

    I used homemade ricotta (drained overnight) and the filling was very loose. A second filling with (much drier) store-bought ricotta was marginally better. Ended up whipping some cream and folding part of the filling in. The whipped cream stabilized it so I could assemble.

    The cake and filling were delicious...that being said...found no need to cut the layers in half nor to brush the sides with chocolate. When I make it again and I will, I will fill the 2 layers which are small to begin with and there is enough chocolate in the filling and sprinkle the top with the reserved pistachios. The cake will still look pretty and will be easier to cut. All the components are delicious.

    I love recipes with weights. When you design your recipes, please add weights for ingredients. Makes your recipes so much more dependable than they already are

      Great taste and a beautiful presentation, but I found problems with the measurements, especially with the filling recipe. Reducing the heavy cream from 3/4 to 1/4 cup still made the filling too loose. I needed to add a stabilizer to hold it together. I would also suggest spreading additional melted chocolate to the top of the cake before sprinkling chopped pistachios. For good coverage to the sides and top, I recommend increasing the quantity of chopped pistachios to 6 oz.
