  • In a food processor, pulse the flour and salt to combine. Add the butter, and process until mixture resembles coarse meal, about 10 seconds. Add the thyme, and pulse a few times.

  • With machine running, add the ice water through the feed tube in a slow, steady stream until the dough just holds together. Do not overmix.

  • Turn out dough onto a clean work surface. Flatten into a disk. Wrap in plastic; chill at least 30 minutes or overnight.
