Ingredients ¼ small pineapple, diced ¼ cup whipped cottage cheese (or regular cottage cheese blended) 2 teaspoons honey 1 teaspoon toasted sweetened coconut (garnish) Directions Prepare and dice 1/4 small pineapple, to yield 3/4 cup. In a glass, layer a third of pineapple with 1/4 cup whipped cottage cheese (or regular cottage cheese, blended) and 2 teaspoons honey.
