This creamy parfait works equally well as a breakfast treat or a dessert.
Prepare and dice 1/4 small pineapple, to yield 3/4 cup.
In a glass, layer a third of pineapple with 1/4 cup whipped cottage cheese (or regular cottage cheese, blended) and 2 teaspoons honey.
Make another layer of pineapple, cottage cheese, and honey; top with remaining pineapple. Garnish with 1 teaspoon toasted sweetened shredded coconut, if desired.
