  • Heat oven to 225 degrees. Line a baking pan with parchment. Slice about 1/8 inch off both ends of plums; discard pits. Cut each remaining piece in half, making 2 wedges. Arrange all plum pieces on pan, spaced 1/2 to 1 inch apart. Sprinkle with sugar.

  • Transfer to oven. Dry plums until the thinner pieces begin to curl inward and the color has deepened, 1 to 2 hours; remove. Dry the wedges up to 30 minutes more, if necessary. Let cool on a wire rack.
