Parsley Dressing

1 cup

Don't leave out the anchovies--they're what give the sandwiches their savory flavor.


  • 2 cloves garlic

  • 4 anchovies, rinsed and dried

  • Juice of 2 lemons

  • Freshly ground pepper

  • 1 cup packed flat-leaf-parsley leaves, finely chopped

  • ½ cup packed watercress leaves, finely chopped

  • ¾ cup extra-virgin olive oil


  1. Chop garlic and anchovies together until a paste is formed. Place in a small bowl and add lemon juice and pepper. Add parsley and watercress. Whisk in olive oil.
