Eggplant Meatball Casserole

These delicate vegetarian meatballs are lighter in texture than standard meatballs, but full of flavor. For best results, form the meatballs and let them sit in the refrigerator overnight -- this helps them firm up and makes them much easier to sear.

    These are really fantastic....The only part I don't like is the frying. Can the eggplant be cooked in the oven?

      Yikes, I just finished making this recipe again, and it IS delicious... The frying is messy and time consuming...I would make this more often if not so fry-messy! Preparing the eggplant in the oven is the way to go!

    Oh my, what a wonderful recipe! I am an eggplant lover, and always looking for new ways to prepare it. To MS12175267: I don't understand why you are annoyed by Sarah. She is not only a very competent chef, she is also very homey and down to earth? Do you enjoy Martha's style better?
