Chicken with Tomatoes, Feta, and Mint


This five-ingredient dinner is quick, easy, and delicious.


  • 8 chicken cutlets (1 ½ pounds total)

  • Coarse salt and ground pepper

  • 2 large tomatoes, sliced ¼ inch thick

  • 3 ounces feta, crumbled (½ cup)

  • ½ cup fresh mint leaves

  • Extra-virgin olive oil


  1. Heat a grill or grill pan to high. Clean and lightly oil hot grill. Season chicken cutlets with salt and pepper. Grill chicken (in batches if necessary) until cooked through, 1 to 2 minutes per side, flipping once. Serve chicken with tomatoes, and topped with feta, mint leaves, and a drizzle of oil. Season to taste with salt and pepper.
