They can be separated and cut into 2-inch lengths called an "English cut." or, if they’re cut crosswise, about ½- inch -thick, they’re known as "flanken cut." Otherwise, they can be cut into bone-in or boneless rib steaks. And then…there are 12-inch long dino ribs that Martha likes to slow-roast.
