  • Preheat oven to 375 degrees.

  • Season chicken with salt and pepper. Transfer to a baking sheet fitted with a wire rack and cook until an instant-read thermometer inserted into the thickest part, without touching the bone, reads 165 degrees, 30 to 35 minutes.

  • Transfer to a cutting board and rest, covered with foil, for 15 minutes before slicing.

I've made chicken this way forever. The only way to go! So simple, toss in oven and take a shower while it bakes or chop up some fresh veggies and roast some potatoes along with the chicken, then get in th he shower.

Something so simple and so good. You only need wait 15 minutes out of the oven to cut for sandwiches, etc.

This roast chicken breast is so simple, but is such a big thing. I now use this for adding to "chicken and noodles" instead of boiled chicken. What a difference! Any time if need cooked chicken, this is it.... chicken salad, chicken sandwich, soup, etc. Thought I was the only one who could tell the difference, but friends wanted to know what my recipe was. If your recipe calls for cooked chicken, try this.
