  • Preheat oven to 425 degrees. Combine ricotta, greens, and Dijon in a bowl, and season with salt and pepper. Spoon mixture into a shallow ovenproof dish. Bake until the top is light golden brown, about 12 minutes. Serve with crostini or crackers.

I made this recipe using two types kale from my winter CSA share. Although it tasted very good as written, I made a few additions since I will be taking it to a very classy dinner party and I want to impress. I added used a food processor to chop up the kale and tossed in a few cloves of garlic. I used a combination of WV ramp salt and spice house porcini salt and added toasted pine nuts and a bit of grated Gouda. I must say, it's really delicious!
