Delicious pancakes! Light, fluffy and tastes of gingerbread. Will definitely make these again. I served them with some homemade apple cider jelly and maple syrup.

Yummy and easy Not to sweet perfect for real Maple Syrup...

I made these this morning for breakfast, and they were perfect. We loved that they are not overly sweet, so with maple syrup (from our family in New Hampshire, not Vermont!), they are exactly the right amount of sweet and spice. I generally do everything from scratch, but I received a pancake spice mix from our New England relatives, which was good, but this recipe is so very much better. I just threw out the rest of the container of the mix. This will now be my only version of this recipe.

My husband, a big gingerbread and spice cookie fan, loved these pancakes. If your family likes molasses, they will like these pancakes, too. They are definitely hearty and made a huge batch.
