That bold color isn’t just pretty -- it’s what makes this root vegetable so good for you. Carotenoids, the antioxidants that give carrots their pigment, may protect against heart disease, cataracts, and certain cancers. You should scrub carrots before juicing, but there’s no need to peel them. No juicer? No problem: Use a blender instead. Puree the ingredients until smooth (adding a little water, if necessary), then strain through a fine sieve.
