A foolproof method for opening a soft-cooked egg: If you plan to serve your egg in an eggcup, use a serrated knife to cut off the top edge. Tap the knife against the shell to crack it, then use a gentle sawing motion to lop off the top. If you want to serve the egg in a bowl, gently hit it in the middle with your knife. Crack it open with your hands, then scoop the egg out of both halves of the shell with a steel spoon.
