    This is an excellent way to make-ahead oatmeal. For my first attempt, I used the fresh fruit I had on hand: a Gala apple, a Bosc pear, and 1 banana. I peeled and diced the fruit and added it to the dry ingredients along with a half cup chopped toasted pecans. I put the dry mixture into an 11X7" pan rather than an 8" square, poured the liquid ingredients on top and baked for about 45 min. I often eat breakfast at work, so this is a perfect recipe to make ahead and bring a square to work. Heat it in the micro for 1.5 min and yum! The oatmeal is nicely chewy, the fruits are cooked, and the mildly sweet custard and butter make the whole thing delicious and pretty good for you, too!

    I’ve been making this simply easy and very tasty oatmeal on a regular basis. Being Hispanic I was told it was similar to a Mexican bread pudding our culture makes on Xmas. I was never a fan of that bread pudding BUT love this, tastes better the next day warmed in the microwave. Highly recommend and wouldn’t change a thing on the recipe.

    All my kids hated it. Not a good taste. Not sweat enough. They much prefer an oatmeal crumble (brown sugar, oats and butter (not melted) rubbed together then crumbled over mixed fruit then baked)

      I like an oatmeal cookie with raisins, too, but that's a completely different thing.

    The only thing I did differently was stir the egg mixture into the oat mixture, rather than drizzling it on top. Still worked.

    I made this recipe this morning. My husband and I loved it. I used blueberries and walnuts but love versitlity and will be sure to experiment with many combinations. I just bought a Heidi Swanson cookbook and wont let it out of my sight. I just lover her recipes. Thanks Heidi.

      I made the recipe. It was delicious!! I will definitely make it again. I bet raisins and apples would be good too.
