Eric Ripert's Salmon Recipes
Chef Eric Ripert shows you how to prepare salmon in three ways: oven-roasted, poached, and sauteed, with a Tarragon Sabayon sauce. Ripert has four restaurants: Le Bernardin, New York; 10 Arts, Philadelphia; Westend Bistro, Washington D.C.; and Blue at the Ritz-Carlton Grand Cayman and a third cookbook, "On the Line," which was given to our studio audience by Artisan Books.
