This cooling Greek condiment helps soothe the heat of spicy dishes.

Ingredients

Makes 4 cups

  • 3 medium cucumbers, peeled, seeded, and cut into 1/2-inch chunks
  • 2 teaspoons salt
  • 2 cups Homemade Yogurt, or prepared
  • 2 teaspoons minced garlic
  • 2 tablespoons finely chopped fresh dill
  • 1 tablespoon chopped fresh mint
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon fresh lemon juice
