Toffee Kumquat Pudding
![]() Moist, cakey pudding cloaked with sticky toffee is an old favorite in Britain (where "pudding" simply means "dessert"). A crown of kumquats makes it fit for a queen. The fruits are poached with sugar, to tame their tartness, and spooned atop sugar inside ramekins. Then a date- and walnut-laced batter is poured over the kumquats and baked; the heat caramelizes the sugar in the ramekins.
