This stellar stand-in for lettuce adds crunch and variety to salads, sandwiches, and more. Napa is a crisp cabbage with an understated, mild taste; long crinkly leaves; and heads that are closely packed.

You can find napa cabbage year-round at the grocery store. Look for firmly packed heads that are heavy for their size; pass over those with dry, limp, or loosely attached leaves. To store, wrap tightly in a plastic bag, and refrigerate up to three days.

Even beyond its delicate flavor, napa cabbage has much to offer a salad. Its ruffly leaves lend more texture than many kinds of lettuce, and all those wrinkles hold dressing well.

Ingredients

Serves 4

  • 2 tablespoons rice-wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 piece fresh ginger (1 inch long), peeled and grated
  • 3 tablespoons vegetable oil
  • 1 teaspoon toasted sesame oil
  • coarse salt and ground pepper
  • 1/2 medium napa cabbage (about 1 pound), cored and cut into bite-size pieces
  • 1 red bell pepper (seeds and ribs removed), thinly sliced
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped roasted peanuts
