This recipe for pesto, adapted from Everyday Food, makes a delicious addition to a prosciutto and pesto panini.

Ingredients

Makes enough for 1 panini

  • 1/3 cup pine nuts
  • 4 cups lightly packed fresh basil leaves (about 2 ounces)
  • 1/2 cup finely grated Parmesan cheese
  • 1 clove garlic
  • Pinch of red pepper flakes
  • Coarse salt and freshly ground pepper
  • 1/2 cup extra-virgin olive oil
