Chocolate-Chip Meringues

Prep: 30 minutes
Total: 1 hour 30 minutes

Ingredients

Makes 30

  • 4 whole eggs
  • 1/4 teaspoon salt
  • 1/4 teaspoon cream of tartar
  • 1/4 teaspoon vanilla
  • 1 cup sugar
  • 12 ounces chocolate chips

Directions

  1. Preheat oven to 225 degrees. Warm eggs in bowl of hot water, 5 minutes. Separate whites; reserve yolks for another use.
  2. In bowl of electric mixer, beat whites with salt, cream of tartar, and vanilla to soft peaks. Add sugar by the tablespoon, beating until stiff, 2 minutes more. Fold in chocolate chips.
  3. Drop scant 1/4 cups of meringue onto parchment-lined baking sheets. Bake until dry, about 1 hour. Let cool.
