Potatoes with Parsley

Grilling vegetables in foil packets seals in moisture for tasty, tender sides hot off the barbecue -- and you won't have to wash a single dish.

  • Yield Serves 4

Ingredients

    • 1 pound small potatoes
    • 1 tablespoon olive oil
    • Salt and pepper
    • Chopped fresh parsley

Directions

  1. Place potatoes on a large piece of parchment-lined foil. Drizzle with olive oil and season with salt and pepper. Fold into a tight packet and grill over medium-high until potatoes are tender, 25 to 30 minutes. Sprinkle with parsley.
